Never heat a non stick pan without some oil in it and never cut anything
in the pan. That is what I was told by a local award winning chef. Also
as stated a well seasoned cast iron pan. I keep a small non stick just
for eggs and nothing else the rest are 'All Clad' pans. All Clad are three
layers of metal and are extremely good pans. They distribute the heat
evenly. Hot pan, cold oil, food won't stick.

Most non-stick coatings have been cleared for use by the FDA, and are considered safe, but I'm not at all sure that teflon is good for the human body. I've been cooking lately in stainless steel. I have a misting gadget that I load with good olive oil, and spray my pan before cooking. Minimum no no sticking, and it cleans up like a dream. Even a scorch will come off with a bit of Bartender's Friend cleaning powder.

Non stick pans are not dangerous to health. If they were then they wouldn't be allowed to be sold.
