Please paraphrase. 

What does "you volunteered me" mean? 

A:we have to clean out the garage. You said you'd help. 

B: no, you volunteered me.

    It means that instead of 'B' being asked if he would help clean out the garage, 'A' told the garage owner that 'B' would be happy to help as well, so 'B' was volunteered without his consent.

    It means you offered my involvement. I didn't.

    It is a way to say "I did not volunteer but that you included me without asking".  You assigned me, in effect, and now you want to pretend I volunteered, but I never did.  there is nothing voluntary about it.

    A:  We have to clean out the garage. You said you'd help. 

    B: No, I didn't volunteer! You made the choice for me. That's not quite the same thing as offering to help you to clean the garage!

    It's a joke. It means that the other person said you'd do it. That's not volunteering. It just means that someone else decided for you.
