Grammar questions?

Sentence: What is the text (that/which) talks about cold showers?

1. Which or what: which one is correct and why?

2. What is the subject of the sentence?

3. If the word "talks" substituted by "teaches",  the sentence will become more natural?

    1 'which talks'

    2 'the text'

    3  Definitely not 'teaches about'.   'Talks about' is normal informal style.  More formal would be '...text which describes cold showers'.

    In a way 'What is the text' feels a bit unnatural.  Ok if you had a page with several different texts in front of you, and you were asked to choose the text about cold showers.
