Do commercial fishermen actually stay up for 72 hours during a 3 day trip or do they get to sleep in shifts? How does it work exactly?

They work in shifts, called watches. I have sailed yachts in ocean races where we had four hour on, four hours off, so we slept four hours at a time. It is tiring. I do not know how long each watch is on a fishing boat, but probably I would guess it is something similar

They usually bed down between hauls, in turns so that there is someone competent always awake and on watch in the wheelhouse. In theory.
