I'm in San Francisco and I can buy any of those, in season, at one place or another. Moose cheese is only made in one place, it seems: https://www.atlasobscura.com/foods/moose-cheese

If you DON'T live in a major city you will have to go internet.

Those aren't in constant production. Generally speaking there will be a boutique market in larger cities. Harrods in London comes to mind. I'm picturing a big market in Sweden with a butcher, baker, etc stalls. Even there, they only come up with the season. You have to know when who's likely to get their hands on it and give them a reason to call you.

The very most expensive things often go at auction. Canned caviar might be at Christie's but an $80,000 tuna is at the fish market in Japan if one of that quality is caught that day. You go there and make your bid, then get out bid and do it again until you win or lose.

  • D'Artagnan https://www.dartagnan.com/ for foie gras and white truffles in season - which they are not

    Petrossian https://www.petrossian.com/caviar for caviar

    Despana https://www.despanabrandfoods.com/ for your ham

You really want to buy sashimi and oysters from a local purveyor

    WTF is moose cheese?

PS try Amazon - they probably have everything
