The Chinese govt answer to that is : chinese, a language with many "dialects"

The linguist's answer is: there are dozens of chinese ("sinitic") languages, that are not mutually intelligible when spoken, but they do share the same written form. Mandarin/putonghoa is pushed by the national government as the spoken standard

Mandarin is now called Putonghua. The term "Mandarin" was seen as elitist, and favoring a stratified society. Putonghua is what is used in all schools in China, but the people still speak many local dialects at home, including Cantonese.
