What is the chemical name of "apog" or "lime" which is usually used for candied fruits?
Where can we buy it in retail?

Calcium hydroxide is a "food grade" lime. It is used in things like pickling to improve firmness. There are a few different forms of lime used for different things. It can also be used in making sugar. It can be very dangerous if any other one than the calcium hydroxide is used in food preparation. I have never heard it called "apog".
