Are you a creative cook ?

I need some ideas for some (fast easy) menu items.

I will be working out of a small Espresso shop kitchen,and limited to using a microwave and toaster oven. Simple, but good and fun tastey things.

    Make mini-pizzas in the toaster oven.

    English muffin, cut in half.

    Pizza sauce


    Just put it on in that order and cook.

    Hi: I cook almost everything in the micro / toaster oven (saves electricity!). A hint - if you have frozen foods that you want to bake in the toaster oven, try partially thawing them in the micro first, they'll cook quicker..just make sure to bake as soon as they are thawed.

    Here are some toasted sandwich ideas:


    1 large Italian roll (or other 12'' sandwich roll)

    6 thin slices imported ham

    4 - 5 slices sandwich pepperoni (or 6 - 8 slices pizza style pepperoni)

    3/4 cup grated mozzarella cheese

    Garlic salt

    Olive oil

    Slice the bread along the side but don't cut it all the way through, spread it open and place the ham down the center, cover with the slices of pepperoni and cover with the mozzarella cheese. Sprinkle garlic salt over and dribble about a half tablespoon olive oil over.

    Toast in oven at 450 on rack set in highest part of oven (or in toaster oven) until cheese is melted and bread browned.

    Ham and Cheese Croissant - baked

    Croissants - 1 per serving

    Thinly sliced deli ham (imported or smoked style) 1 to 2 slices per serving

    Swiss or white American cheese - 1 slice per serving

    Mustard - pref grey poupon or spicy brown

    Cut croissants in half and spread both sides lightly with mustard - lay a slice or two of ham and a slice of cheese on bottom half of croissant. Wrap sandwiches in tinfoil and bake at 375 until crisp and cheese is melted (this is also good prepared in toaster oven)

    Poor Boy - New England Style

    1 large Italian roll (or other 12'' sandwich roll)

    3 thin slices imported ham

    2 slices white American cheese, cut in half

    minced onion

    tomato slices - about 4 halves per sandwich

    Salad or olive oil

    Slice the bread along the side but don't cut it all the way through, spread it open and place the ham down the center, cover with the 4 pieces of American cheese and cover with the tomato slices. Sprinkle minced onions over and dribble about a half tablespoon of oil over.

    Toast in oven in a rack placed high up in oven at around 450 - WATCH CAREFULLY OR IT WILL BURN! Bake until cheese is melted and bread browned. Can also be cooked in toaster oven .

    Sprinkle with salt and fresh ground black pepper and serve.

    You can cook fudge in a microwave.

    The pizza idea is great and can only limited by your imagination.

    I listed a few sites below..from what I have seen you can cook almost anything with the few items you have. If you have a fridge/freezer you can serve the desserts with ice cream and such. Have fun and experiment.

    If you are into vegies, these can be done in the microwave. Just place your fav vegie in a bowl, put in just a few tablespoons of water and heat until tender....about 5 minutes. Carrots are so yummy this way!!!

    This olive tapenade is really good served on a toasted crispy pita. Easy and cheap to make.

    20 pitted Kalamata olives, coarsely chopped

    1 Tbsp rinsed, drained, and chopped capers

    1 tsp fresh lemon juice

    2 tsp olive oil

    1/2 tsp anchovy paste (optional)

    Fresh cracked black pepper


    Combine Kalamata olives, capers, lemon juice, olive oil, anchovy paste, and pepper. Mix well. Refrigerate and use within two weeks.

    Use as a spread for sandwiches like panini and muffaletta or as a condiment.

    Yield: about 1 cup

    Panini sandwiches are all the rave and are really good. All you really need is a sandwich press.

    Chocolate/Almond Biscotti go great with coffes, are cheap to make and selll quickly. There are tons of flavor options.

    Preheat oven to 325 degrees F. Lightly grease and flour large baking sheet. Reserve 1/2 cup of the chocolate. Microwave remaining chocolate in small microwavable bowl on HIGH 2 minutes. Stir until chocolate is completely melted; cool slightly. Mix flour, baking powder and salt in medium bowl; set aside.

    Beat butter and sugars in large bowl with electric mixer on medium speed until well blended. Add eggs, 1 at a time, beating well after each addition. Blend in melted chocolate and vanilla. Gradually add flour mixture, beating well after each addition. Stir in almonds. Divide dough in half. On floured board, shape each half into 10x2-inch log. Place, 2 inches apart, on prepared baking sheet.

    Bake 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool on baking sheet 15 minutes. Place logs on cutting board; diagonally cut each log into 18 slices using serrated knife. Place slices, cut sides down, on baking sheet. Bake an additional 20 minutes, turning biscotti over after 10 minutes. Remove to wire racks; cool completely.

    Melt reserved chocolate as directed on package. Drizzle over biscotti. Let stand until chocolate is firm.

    Yield: 36 servings

    12 (1 ounce) squares BAKER'S Semi-Sweet Baking Chocolate, coarsely chopped, divided

    2 cups flour

    1 1/2 teaspoons CALUMET Baking Powder

    1/4 teaspoon salt

    1/4 cup butter or margarine, softened

    1/2 cup granulated sugar

    1/2 cup firmly packed brown sugar

    3 eggs

    1 teaspoon vanilla

    1 cup PLANTERS Slivered Almonds, toasted

    take tortilla shells and coat them with water then sprinkle with cinnamon sugar and cut into triangles, then toast until stiff. it's easy and tastes good with fruit salsa.

    one time my cuosin put marshmellows in the micro. it blew up but tasted deeeeeliciuos.
