Please excuse the stupid question, but I am a beginner. Ok, so its the holidays and I have started baking and each recipe requires me to "cream the sugar with softened butter". As far as I understand, this means to combine them but where I live I tend to keep the house on the cool side so leaving the butter out at room temperature doesn't make it soft. And any effort I make to warm it makes it melt completely. Is there a trick to just make it soft?

  • Expired eggs?

I cracked an egg into a bowl to make cornbread, & I didn't yet realize that the date on the carton was 4 months old. The yolk came out kind of dried up and gooey, and hard to whisk. I was wondering if that could make someone sick. That's not really normally for an egg yolk to have that texture.
