Can I make sauces or anything and freeze it a week or two ahead? What order should I do things and what's a good time frame? Thanks!

    My dad has high blood pressure, high cholesterol, diabetes, and somewhat vitamin deficient, along with a few other health issues. He doesn’t eat much fruits and vegetables because he can’t afford them, nor can he stand long enough to cook in the kitchen most days. As his concerned only child, when I cook for him, I try to get him to eat more avocados and leafy greens because in the right amounts, it could greatly help many of the issues he’s having. Only— he won’t eat them. He has an issue with mushy/ creamy* textures (and gritty, and earthy notes) and his tastebuds don’t do avocado. He doesn’t do guacamole, won’t eat them hard, medium, or soft. He just won’t do it. He is also allergic to onions and cannot have grapefruit or pineapple. How can I incorporate this superfood into his diet in a way that he won’t be able to tell it’s there? Or, what are foods I can give him in place of the avocados? If you have the quantities of the foods ie: “one cup of _______ a day equates to half a large avocado”, I’d very much appreciate it!

You fill the chicken breasts with the filling and brown them on each side with olive oil and crushed chopped garlic. You sprinkle on some oregano, thyme and rosemary and turn the fire down and cook til done. Serve over a bed of rice and a tomato sauce flavored with crushed chopped garlic, basil and oregano which you pour over the chicken and on the rice too but don't completely cover the rice or chicken as it looks better that way. You can garnish the plate with a piece of the parsley. You might serve with a Greek salad appetizer or dessert is up to you. Stuffed grape leaves are a good appetizer for Greek food. .
