Help me with Pate Brisee Recipe?

I don't understand the below recipe. what do "make a well in the sanding obtained" and the last sentence " without the mix too" mean? Thank you.

Sift the flour directly above the worktop. Cut butter into small pieces and work it with your fingertips with flour until mixture is sandy and there are no more pieces of butter.
Make a well in the sanding obtained. Break the egg and pour sugar flavored with vanilla.
Mix with your fingertips all the ingredients, but without the mix too.

I'm not capable to upload the whole recipe. there are only a few sentences left. I only do not understand the two sentences . can anyone help me?

This means that after you add your flour in a BOWL. add the butter and with your hands keep crumbling it until it gets dry and the consistency of dried corn meal, THEN make a hole in the center of the flour, AND THEN ADD YOUR LIQUID (usually cream) , and then mixing with hands until all liquid is absorbed ( BUT WITHOUT THE MIX TO DRY OR WET) and slowly keep adding flour a small amount at a time until the dough does not stick to your hands, then cover and let rest FOR AN HOUR before using or wrap in plastic wrap and put into frig until next time.
