With all due defference to your mother, I almost always think people should go with their dreams. Many community colleges offer excellent culinary arts programs. Trade Technical College in Los Angeles has a good program.

If you really feel you must attend a commercial culinary program, Le Cordon Bleu has academies in Los Angeles and San Francisco and has an excellent reputation. It is very expensive, however. Some of the smaller schools have first-rate reputations, but they would not be as well known to people doing hiring.

Obviously if you are in some other part of California, just change the search city.
The advantage of a large national school such as Le Cordon Bleu would be its name-recognition. You want to shoot for a position in an expensive restaurant or hotel in LA, San Francisco, or Vegas, not the local Sizzler.

Dieticians end up in hospitals and nursing homes. The pay sucks. Cooking bulk food is not particularly glamorous.
