How does hydroponics help potatoes?

Potatoes can be grown with a soil less media using Hydroponic nutrients, they are an underground crop and has to be covered with something, I have heard of them being grown in Perlite and Vermiculite mixture as long as its dark and does not hold to much water they should grow, almost all crops grow using Hydroponics are more productive than those grown in soil.
